Lo-Dough Dark Sweet Cherry Bakewell Pudding

This new Lo-Dough recipe was borne after gaining inspiration from other healthy Bakewell recipes. All of the recipes I came across, even though healthy contained pastry and we all know pastry is not just heavy on carbs and fats but it vastly increases the calorific content of an otherwise healthy and tasty dessert.

The other thing I noted was we all love the jammy base and many of the recipes I came across used raspberries but for me a bakewell is best with cherries – lots of them so I have created a denser sweeter cherry base using dark sweet defrosted frozen cherries mixed with a little black cherry jam to retain the authentic taste of Cherry Bakewell but with a pudding consistency. For sweetener I use Sukrin Gold. It’s a natural alternative to brown sugar. It can be found on Amazon and at Holland and Barrett- it’s a great flavour and no chemical aftertaste and perfect for baking.

Pre heat oven to Gas 5, electric 190, fan 170

You will need

1 x 20cm deep pie dish

Ingredients

1 piece of Lo-Dough

200gms defrosted frozen dark sweet cherries roughly chopped and lightly mashed

4 tbsp Black Cherry conserve

50gms ground almonds

50gms dried polenta (corn meal)

50gms sukrin gold or similar sweetener

2 large eggs beaten

100gms fat free natural yoghurt

1/2 tsp almond essence

1tbsp flaked almonds

6 halved glacé cherries (optional)

Press Lo-Dough into the baking dish. I used three pickle jars to weight it down and left it in the fridge overnight covered with tin foil. If you don’t have the time to do this just press it into the dish, place something washed clean out of your kitchen cupboard on top to hold it down whilst you put the filling inside.

In a dry frying pan heat the ground almonds over a medium heat until starting to turn golden. Pour into a large bowl. When cooled slightly add the Polenta, baking powder and sweetener and mix.

In a separate bowl mix the yoghurt and almond essence with the beaten eggs

In another bowl mash the cherries and conserve together and spread over the bottom of the Lo-Dough removing the weighted object.

Pour the egg mixture into the polenta mixture and stir together briefly until mixed evenly.

Pour this over the cherries and spread to the edge

Scatter the flakes almonds evenly

Decorate with glacé cherries marking out the portions (10)

Place on a baking tray in the centre of the oven for apx 40min until risen and a pale golden colour. It will feel springy to the touch in the middle, remember this is a Pudding not a cake.

Cool before serving

Carbs 15.4 gms

Fat 5 gms

Mince Pie? Why not have two?

I made these amazing little mince pies with Lo-Dough

Even more amazing, I made 8 using just one piece of Lo-Dough

And….yes, the most (even more) amazing thing is you can have two for just 1.5 syns! Or if you are a teeny weeny little mince pie muncher, don’t worry, all 8 would set you back just 6 syns!

Ingredients

1 piece of the incredible, amazing Lo-Dough

8 tsp Mincemeat

2 tsp sweetener

2 tbsp cold water

Butter frylight

1/2 tsp icing sugar (optional and an extra 1/2 syn)

Apx 65mm fluted Pastry cutter

Jam tart type baking tray

Small decorative pastry cutters, I have a Xmas tree and a star

Method

Pre heat oven to Gas 5, electric 190, fan 170

Dissolve sweetener in the cold water in a small flat dish

Using to round pastry cutter firmly press out 8 rounds from the Lo-Dough and set aside.

Using decorative pastry cutter or your own creative skills make 8 small decorations for adorning the tops

Spray tart baking tray with butter frylight

Dip each round of Lo-Dough in the sweetened water and place in one of the baking tray moulds

Add a teaspoonful of mince meat to each piece and spread evenly leaving the edge clear

Add a decoration to the top of each pie

Spray generously with frylight and then place the tray in the oven for apx 10 mins taking care not to burn them.

If after ten mins the bottoms are slightly moist, remove from moulds and place on a baking tray for a couple of mins to firm up.

Using a sieve, shake the icing sugar evenly between the pies.

Let cool slightly before eating so you don’t burn your mouth and tongue!

Tiramisu-Lo

I am especially proud of this Lo-Dough creation – it’s a delicious indulgent dessert but kind on the calories, amazingly filling, and a very good substitute for the calorie, sugar and fat laden Tiramisu – I call it Tiramisu-Lo as a tribute to the best low calorie and carb food created in years!

The following recipe makes 2 generous portions which work out at 5 syns each or 4 smaller desserts for 2.5 syns each. Using Lo-Dough dramatically cuts down on the calories and carbs, it takes on the cake texture layer very well and is far more healthier!

Ingredients

2 pieces of Lo-Dough 4 syns

Apx 300 ml very strong freshly brewed black coffee

4 tbsp sweetener – 2 syns

1/2 500gm tub Muller Light Skinny Latte

2 tsp roasted chopped nuts 2 syns

2 tsp unsweetened cocoa powder 2 syns

Light squirty cream optional

Method

In a deep bowl tear the Lo-Dough into small pieces. Add the sweetener to the coffee. Pour over the freshly brewed coffee and allow to soak. Leave for apx 15 mins and then mash the mixture with a fork until smooth, making sure it is completely soaked in coffee. Pour any excess away. Leave to cool.

When cool divide the mixture between 2 or 4 sundae dishes and spread evenly.

Divide the yogurt between the dishes and layer on top of the coffee mixture.

Using a sieve, shake the cocoa powder on top. Sprinkle with chopped nuts.

I added a raspberry on top and later some light squirty cream.

I may use a bit of Tia Maria next time in with the coffee! We both thoroughly enjoyed this lovely dessert and it didn’t feel like a low cal dessert. If someone had given me this and didn’t tell me what it consisted of I would have felt like I had gone off plan and felt the guilt!

Lo-Dough Cinnamon Swirl Kebabs

Most of my recipes start off with an idea whilst I am waking and planning what to do with my day. This morning I got quite excited about this one and couldn’t wait to make it. Success of failure – I never know until I taste it!

For the new visitors reading my blog posts for the first time let me tell you….I love Lo-Dough! It’s incredibly low in carbs and calories, gluten free, paleo, fat and sugar free and full of protein and fibre! It’s also a slimmers dream! You can have a wrap sized piece for just 39 calories, it’s filling, versatile and I love experimenting with it!

This mornings idea came to me after seeing a blog post about Cinnamon Bread. I love Cinnamon – especially those swirls which are covered in icing! But, they aren’t too healthy and on top of that I suffer from bloating with bread. The cogs in my brain started whirring and I came up with this idea!

So let’s see how you make Lo-Dough Cinnamon Swirl Kebabs!

Serves 2

Ingredients

2 pieces of Lo-Dough

1 tbsp ground Cinnamon

1 tbsp Sukrin Gold ( this can be found on Amazon)

1 tbsp granulated sweetener plus another Teaspoon

1 egg white

1 tbsp cold water

20 sprays butter frylight

2 tbsp Sweet Freedom Choc Pot

6 tbsp Muller Light Skinny Latte 0% fat yoghurt

2 tsp roasted chopped nuts

2 wooden skewers

Baking dish large enough to place skewers in

Method

Mix Cinnamon, Sukrin Gold, egg white, and 1 tbsp of sweetener together in a bowl to form a paste

Place Lo-Dough wraps on a large chopping board and spread equally with the Cinnamon paste

With a sharp knife cut Lo-Dough into six strips per piece I find this method works best than rolling the whole piece and then cutting through the Lo-Dough as the filling squirts out!

Roll each strip into a pinwheel and thread onto a skewer See below pic. The left

skewer was made using my recommended method hod and the right one was made by rolling up the whole piece and then slices my. It looks far neater on the left! That’s my one 😉

Mix together 1 tsp of sweetener with 20 sprays of butter frylight and a tbsp

of cold water to form a basting liquid. Baste the outside of the skewers with the liquid and place skewers into a baking dish with 2 tbsp of water in the bottom. Cover with tin foil and bake in a pre heated oven – Gas 5 for just 5 mins

Remove foil and bake for further 3-5 mins

Serving suggestion

Fresh raspberries, Muller Light Skinny Latte yoghurt, Sweet Freedom Choc Pot and a tsp of chopped roasted nuts

Syn roundup

Lo-Dough x 2 = 4 syns

Sweetener = 1 syn

Sukrin Gold = 1 syn

Choc pot = 2 syns

Chopped nuts = 3 syns

Per Serving = 5.5 syns

What’s Hypnosis Ninja?

So I figure when we arrive at a blog post to find out about something that intrigues us we ask three main questions

That’s what I asked myself when I was very kindly accepted to trial their sessions. So Hypnosis Ninja have a selection of downloadable tracks which takes apx 20 mins to listen to and is tailored to your particular problem or addiction.

Is it expensive? Cut to the chase it’s just £9.99 per track! A fraction of a hypnotherapy session! Links at the bottom of this blog post.

Does it work? You listen to them as much as you can and if you have the same results as me you will notice subtle changes at first. They use hypnotherapy combined with New code NLP ( Neuro linguistic programming) to help reprogram your mind and thought processing. Hypnotherapy doesn’t always work for everyone but that can be partly to do with how you commit to it. It is however a tried and tested way to help people beat their demons. NLP simply described is like planting little seeds in your mind – a way of reprogramming your thought processes. Combining the two methods makes for a pretty powerful combination.

Ok so if you are reading this then you probably like me need some help. As a chocoholic and having had an odd relationship towards food with sporadic periods of binge eating where food has been in control I was excited to get to try these. I downloaded two tracks and yes,I can feel some change.

The two tracks I listened to are

  • Chocolate addiction

I have always had strong compulsions throughout my life in relationship to food and been a massive overeater. If I find something I like I buy 10 – not 1, it’s obsessive and it’s unhealthy.

If I find something I like I can’t stop eating it. Whether it be healthy or unhealthy but chances are it will be unhealthy !

Chocolate is also always a pull. Searching for the ultimate chocolate has ruled my thoughts for many hours in a day!

I want to keep this short so this is what I have noticed since listening to my Hypnosis Ninja downloads on my phone

  • I am not obsessing about chocolate
  • I know how to make chocolate and have all the ingredients to hand, yet even though I have had plenty of time on my hands I haven’t made any
  • I am eating healthy smaller portions
  • Food isn’t in the forefront of my mind all the time

This is after just spending 20 mins of listening to the downloads just a handful of times.

Things I have noticed today

  • I managed not to visit a cafe for cake and chocolate despite being right outside and it’s open doors calling me!
  • After a stressful day I also reached for healthy pieces of Chicken and didn’t obsess about chocolates
  • Despite the days events I threw a meal together instead of going for a takeaway!

Like anything else I don’t expect a miracle cure but am willing to try anything that will help and I have noticed changes that are encouraging !

Being a Brand Ambassador

Lots of you who read this will have probably seen a link on my social media. Some may understand the world of being a ‘blogger’ , ‘influencer’, or ‘brand ambassador ‘. Some of you may be intrigued – I get messages from people asking me how to become one. My response is always the same. Work hard, be prepared to spend up to and sometimes over 12 hours a day to build good relationships and be courteous, kind, respectful and patient.
My post though is not really about how to build your ‘visibility’ which makes it more attractive to engagers – it’s about what happens in the day of myself – a brand ambassador, I will call it ‘blogger’ as it’s quicker to type lol.

My life as a blogger started with my weightloss journey. My venture into Slimming World was the best thing I have done for myself in years . I have to thank Slimming World for giving me confidence, health and helping me regain self esteem. It began sharing ideas in group, sharing recipes and new products. People started to look to me in group for inspiration which was unbelievable to me and I became a very active member on their Facebook page sharing anything I could find and cook to inspire. I was voted Woman of the Year 2016 and it truly was one of my happiest days!

That’s where my life as a blogger started as I decided to be more active with my social media sharing to a larger audience.

My typical day starts as soon as I open my eyes! I reach for my phone, check to see if any of my followers or friends have sent me late messages – I always respond there and then. The only messages I ignore are the spoof accounts!
So once I have replied to any messages I quickly scroll through my feed to see what people have been up. Unfortunately with some platforms if you like too many it’s seen as spam so I am only able to ‘like’ a few. If you don’t get a like off me, it’s not because I don’t want to, it’s because we are restricted and I also follow over 4000 people so it’s impossible to like them all. I get inspiration from everyone though. Posts jump out, meals inspire me and your stories are so motivational. The most important aspect about my Instagram account are my followers – not the products I receive – I always respond to messages throughout the day as soon as I can and love getting them and being in touch with such kind genuine people. We are all wanting to be healthier, slimmer and fitter – That is the foundation of my life as a blogger.
Once I can part myself from my social media and have responded to all messages I get up and have my coffee. My phone is on charge ready to take breakfast pics. I photograph, eat and post my pics at the same time. Many a meal goes cold lol!
I tag in any suppliers on my pics and use lots of hashtags which I key in manually. I don’t use any automated system . When I post I am posting live.

Once breakfast is over I shower, get dressed and do my makeup and think of any stories I can do. I love talking to you all and the messages I get in return which need responding to I can’t ignore them!

For those who are not so familiar with my lifestyle we live on beautiful big boat. This needs taking and filling up with water, emptying out, filling with diesel etc – probably 3 times a week. We have to watch the weather – it gets difficult if it’s windy and in winter, but we get to enjoy the summer days ‘al fresco’ We fit this into our days which takes a couple of hours or so and keeps Ken busy and happy. I quite often in the midst of a blog have to quickly put my coat on and help Ken manoeuvre the boat. Especially if the weather is bad!
Around lunchtime I get the post.
If I am lucky enough to have received a delivery it gets opened and I plan my day around that.

I like to do my reviews as soon as possible but sometimes have to schedule them as I don’t like bombarding you with too much at once but have to balance that with the expectations from suppliers.
I always treat suppliers and their products with respect – If I am not keen on something I have contacted suppliers and explained to them why and I don’t post. I don’t really want something on my feed I don’t like anyway as I like to have a positive feed and don’t want to spread negativity. We all need more positivity in our lives but it’s got to be honest too!

So on the days I have received a delivery I read up about it. Take photos, experience it and review honestly. I then post.
Once this is done I check messages again, check feeds – I have Instagram, Twitter and Facebook and then plan lunch if I haven’t already squeezed it in between all of the above! I photograph again, post, check messages, check my feed.
It all settles down around mid afternoon and I get some quiet time before planning and cooking tea, taking photos, posting, watching tv with one eye and responding to messages and checking feeds.

It all sounds a bit laborious but I love it!
Ken my partner is very patient with me and acknowledges this has to be done lol!
We only watch a couple of hours tv so my social media gets priority again! And so it goes on until bedtime!
Don’t get me wrong I do have free time to spend with family and friends and I love to have a bit of pampering now and then. I am semi retired now but work 1-2 days a week as I am not at retirement age yet! – my days are full and happy! I wouldn’t change it. We are lucky enough to get to try new and exciting (and some not so exciting) products and my mission is to share these with you. I love new ideas for foods, recipes, gifts, gadgets, and the occasional luxury! My friends and family get first hand experience of these as I am a sharing type of person!

Some may see bloggers as ‘freeloaders’ but we actually work hard to do what we love to do, which in monetary value equates to way below the minimum wage! Although we are privileged enough to receive sample products from suppliers purely for review we never take this for granted. It is a job/ hobby/vocation. The products we receive from suppliers are either gifted or discounted and if we are passionate about something you will know about it!
I don’t always post about products I have been sent and quite often write about products I have purchased or things I have seen when out and about. It’s about sharing after all ! I sometimes receive products on a regular basis, build good relationships with suppliers and often do work for them behind the scenes.

They may ask for my help in creating recipes which I plan and write up for them to publish or are looking at development and ask for my input.

My foundation for all of the above is searching for a healthier,
more confident and a happier me. My Slimming World group enabled me to move on from the rut I was in and give me a focus for the future, inspired by encouragement from the same people and I will be forever grateful for that.

I love creating new recipes and sharing them and spend as much time making stuff as I can. I sometimes end up with too much because the cooking bug got a hold of me – I should open a cafe lol!

Life is importantly about balance, I now look towards a healthy lifestyle with a bit of indulgence and luxury but continue to share what I experience with you guys – my extended support group. Thankyou for being there and listening to my ramblings, for putting up with my posts if it’s not your ‘cup of tea’, for ‘liking’ my meals when it’s not something you would have and for watching my insta stories and sending me lovely messages which I am always telling Ken about. AuntieMos Perfect Cookies!

This was a great find at the Yorkshire Food and Drink Festival last week. Auntie Mos are a small company who have perfected the art of cookie mixes!

They are vegan and make lovely dairy free cookies. The pack which is incredibly easy and fast to make and ready from start to finish in 20 mins states 99 cals per cookie and makes 12 altogether. I split the mixture into 18 cookies
which works out at a very respectable 3.5 syns each (check syn values yourself to protect your weightloss)

I followed the instructions to the letter and 30 mins later allowing for cooling down I has a delicious 3.5 syn cookie which was crunchy and soft in the middle – a perfect cookie!
