Orzo Pasta Salad with Roasted Cherry Tomatoes and Baby Leaf Spinach
- 150gms dried Orzo pasta
- 1/2 tsp turmeric
- 1 pk sweet cherry tomatoes
- 1 tsp oregano
- 1 tsp sweetener
- Fresh ground salt and pepper
- 1/2 tsp aromat seasoning
- 120gms Baby leaf spinach
- Garlic frylight
Preheat oven to gas 5
Half the tomatoes and place in roasting dish. Sprinkle with oregano and sweetener and season with salt and pepper.
Bake in oven uncovered for 45 mins
Cook orzo pasta as stated on packaging adding 1/2 tsp turmeric to the water.
When cooked, drain pasta and place in a large bowl. Stir in tomatoes and spinach
Add apx 12 sprays of garlic frylight and continue stirring until spinach is wilted.
Season with aromat
Serve hot or cold.
Serving suggestion add chunks of Mozzarella for a complete tasty meal
